Lunch Recipes For Father's Day

Broccoli Chicken Casserole

Ingredients
  • 2 cups Sour Cream
  • 1/4 cup Parmesan Cheese, grated
  • 1 cup Semi Hard Cheese, shredded
  • 1 clove Garlic, crushed
  • 2 tbsp Butter 
  • 1-packet Wide Egg Noodles, cooked
  • 1 pound cubed Chicken Breast Meat, cooked
  • 1 can Condensed Cream Of Chicken Soup
  • 1 cup Black Olives, sliced
  • 2 heads Broccoli, cut into florets
  • 1 tsp Curry Powder
  • Salt and Pepper to taste
Directions
  • Preheat oven to 325 degrees F (165 degrees C).
  • Take a bowl and mix the sour cream, Parmesan cheese, semi hard cheese, salt, pepper and garlic in it.
  • In another large bowl, stir butter into noodles. Add this to the sour cream mixture.
  • Take a third bowl and combine chicken, soup, olives, and broccoli in it.
  • Add this mixture to the noodle mixture and make sure that everything is combined well.
  • In a baking dish, measuring 9x13-inch, spread the mixture and sprinkle with curry powder.
  • Place the dish inside the preheated oven.
  • Bake for 30 minutes and serve hot.
Garlic Chicken Stir-Fry

Ingredients
  • 2 tbsp Peanut Oil
  • 6 cloves Garlic, minced
  • 1 tsp Fresh Ginger ,grated
  • 1 bunch Green Onions, chopped
  • 1 tsp Salt
  • 1 pound boneless, skinless Chicken Breasts, cut into strips
  • 2 Onions, thinly sliced
  • 1 cup Cabbage ,sliced
  • 1 Red Bell Pepper, thinly sliced
  • 2 cups Sugar Snap Peas
  • 1 cup Chicken Broth
  • 2 tbsp Soy Sauce
  • 2 tbsp Sugar
  • 2 tbsp Cornstarch
Directions
  • Heat peanut oil in a large skillet.
  • As the oil begins to smoke, quickly stir in 2 cloves, minced garlic, ginger root, green onions and salt. Stir-fry until onion becomes translucent, about 2 minutes.
  • Add chicken and stir until opaque, about 3 minutes.
  • Now, add 4 cloves and minced garlic and stir well.
  • Gradually add sweet onions, cabbage, bell pepper, peas and 1/2 cup chicken broth/water and cover the skillet.
  • Take a small bowl and mix 1/2 cup chicken broth/water, soy sauce, sugar and cornstarch in it.
  • Add sauce mixture to the skillet and stir until chicken and vegetables are coated with the thickened sauce.
  • Serve immediately, over hot rice if desired.
Beef Nacho Casserole

Ingredients
  • 1-pound Ground Beef
  • 1-1/2 cups Chunky Salsa
  • 1 can Whole Kernel Corn, drained
  • 3/4 cup Creamy Salad Dressing
  • 1 tsp Chili Powder
  • 2 cups Tortilla Chips, crushed
  • 2 cups Colby Cheese
Directions
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Take a large skillet and place ground beef in it. Cook it over medium-high heat, stirring constantly, until evenly browned.
  • Drain the extra fat or grease.
  • Remove the skillet from the heat and stir in salsa, corn, salad dressing and chili powder, into the beef.
  • In a 2-quart casserole dish, layer the ground beef mixture, tortilla chips and cheese, twice, finishing with cheese on top.
  • Place the dish inside the preheated oven.
  • Bake for 20 minutes, uncovered, until cheese is melted and dish is thoroughly heated.
  • Serve hot.
