  • 3 small Zucchini (Tori)(diced)
  • 2 large Tomatoes (chopped)
  • 2 fresh Yellow Hot Peppers (chopped)
  • 1 Onion (thinly sliced)
  • 1 clove Garlic (chopped)
  • 1 tbsp Olive Oil
  • 1 can whole Kernel Corn (drained)
  • ½ lb Monterey Jack Cheese (cut into chunks)
  • 1 tbsp fresh Cilantro (Hara Dhania)(minced)
  • Salt and Black Pepper to taste
How to make Calabacitas:
  • Heat the oil in a saucepan.
  • Place zucchini, tomatoes, peppers, onion and garlic into the saucepan.
  • Cook on low heat until all ingredients are hot and onion is translucent.
  • Add corn and cheese. Cover the pan and continue to heat until cheese is melted.
  • Sprinkle with cilantro, salt and pepper.
  • Serve hot.
