Ingredients:
  • For the Cake:
  • ½ cup Unsalted Butter
  • 1½ cups Sugar
  • ½ cup Brown Sugar
  • 2 Eggs
  • 2 tsp Vanilla Extract
  • 120 g Unsweetened Chocolate (chopped)
  • 2 tsp Espresso Powder
  • 1¾ cups Pastry Flour
  • ¼ cup Cocoa Powder
  • 1 tsp Baking Soda
  • ¼ tsp Salt
  • 1 cup Sour Cream
  • ½ cup Water

    For the Frosting:
  • 2 cups Unsalted Butter
  • 1 Egg Yolk
  • 360 g Bittersweet Chocolate (chopped and melted)
  • 2 tsp Vanilla Extract
  • ¼ tsp Salt
  • 2½ cups Icing Sugar (sifted)
How to make Chinese Chocolate Cake:
  • Preheat oven to 350 °F.
  • Grease two baking pans with butter and flour.
  • Combine butter, sugar, and brown sugar in a bowl. Beat until creamy.
  • Whip eggs with vanilla in another bowl and fold in the butter mixture.
  • Heat water with chocolate and espresso powder in a pan on low flame until melted. Remove and cool.
  • Add butter mixture and whisk well.
  • Sift flour, cocoa powder, baking soda, and salt together in a large bowl.
  • Add flour to the butter mixture, alternating with sour cream, a little at a time.
  • Divide the mixture amongst the two prepared pans.
  • Bake for 25-35 min.
