  • 3 cups Water
  • 2 tbsp Sugar
  • ½ cup Pork
  • ½ Lime
  • 3-4 Kaffir Lime Leaves
  • 4 tbsp Fish Sauce
  • 1 tbsp red Curry Paste
  • 1 cup Coconut Milk
  • ½ lb Chinese Water Apinach (cut)
How to make Chinese Water Spinach Curry:
  • Cut the pork into half inch cubes.
  • Also cut the Chinese water spinach into inch long pieces.
  • Heat a skillet and add coconut milk and curry paste.
  • When the mixture starts sizzling add the pork and spinach.
  • Stir to mix properly.
  • Add more coconut milk and water and set it to simmer.
  • Add fish sauce and sugar.
  • Now squeeze the lime juice and add the kaffir lime leaves.
  • Stir thoroughly and simmer for half an hour.
  • Serve hot.
