  • 10 cups Cucumbers (finely chopped and unpeeled).
  • 4 cups Red Bell Pepper (finely chopped).
  • 3 cups Green Bell Pepper (finely chopped).
  • 1 cup Celery (finely chopped).
  • 1 cup Onion (finely chopped peeled).
  • ½ cup Pickling Salt
  • 3½ cups White Vinegar
  • 2-1/3 cups granulated Sugar
  • 4 tbsp Mustard Seeds
  • 2 tbsp Celery Seeds
How to make Cucumber Relish:
  • Mix the chopped cucumbers, bell peppers, celery and onion in a steel bowl and sprinkle in salt. Mix thoroughly and set aside for 4 hours.
  • Now rinse all the chopped vegetables with cold water and then squeeze dry.
  • In a pot mix the vinegar, sugar, mustard seeds and celery seeds.
  • Boil in medium heat and then add the cucumber mix.
  • Simmer for 10 minutes in low heat.
  • Set it to cool and fill into prepared jar.
