Ingredients:
  • Brine:
  • 3.7 Liters Apple Cider
  • 3.7 Liters Water
  • 4.5 Kg Ham (uncooked)
  • 4 Cloves
  • 1 Cup Kosher Salt
  • 1 Cup Dark Brown Sugar
  • Oil
  • 2 Cinnamon Sticks.

    Glaze:
  • ½ Cup Honey
  • 1 Cup Dark Brown Sugar
  • ½ Cup Dijon
  • 3 Cup Pineapple Juice
  • 200 Grams Can Crushed Pineapple with Juice
How to make Deep Fry Ham:
  • Put all the brine ingredients in a large plastic tub and blend it until it dissolved.
  • Place the brine and refrigerate overnight.
  • Next day take out of the brine and dry well.
  • Fill your turkey fryer with the peanut oil.
  • Heat the oil up to 375 deg F.
  • Keep the ham inside the fryer carefully.
  • Cook for about 8 min per pound.
  • Ham will be cooked when it is 160 deg F.
  • Carefully remove the ham, let it cool for 10-20 min and drain the over oil for about 15 min.

    Glaze:
  • Mix all the ingredients in a saucepan on low flame
  • Reduce heat until the syrup is consistent.
  • Let the glaze cool.
  • Pour it over the deep fried ham.
  • Serve thereafter.
