  • 2 long & thin Eggplants (sliced)
  • 2 Potatoes (peeled & cubed)
  • 3 Tomatoes (chopped)
  • Salt to Taste
  • 1 tsp Red Chilly Powder
  • 1 tsp Coriander Powder
  • ½ tsp Garam Masala
  • A pinch of Turmeric Powder
  • 3 tbsp Oil
  • 3 cups Water
  • ½ tsp Sugar
  • 2 tsp Coriander Leaves
How to make Eggplant Potato Curry:
  • Heat oil in a frying pan on medium flame.
  • Add tomatoes with salt and turmeric powder and cook for 4-5 minutes.
  • Stir in potatoes, eggplant, all spices, sugar, and water and cook it covered, until vegetables are tender.
  • Remove from the heat and top with coriander leaves.
  • Serve it hot with rice.
