Ingredients:
• 2.2 kg Fresh Figs
• 3/4 cup Water
• 7 cups Sugar
• 1/4 cup Lemon Juice
• 1 small packet Pectin
How to make Fig Jam:
First wash the figs under running water. Then cut off the stems and the bottom of the figs.
Heat water into a pot and bring it to a boil.
Pour the boiling water over figs and leave it for 10 minutes.
Drain the water and chop the figs.
Now mix a little pectin with about 1/4 cup of sugar.
Take a pot and add 3/4 cup water, sugar, rest of the pectin and figs. Heat it to boil, stir occasionally until sugar dissolves.
Cook rapidly until thick. Stir frequently to avoid sticking.
Add lemon juice and the earlier-made pectin-sugar mixture into the fig mixture and cook 1 minute longer.
Pour the mixture into Ball Jars. Allow it to cool and then put it in the refrigerator.
