Ingredients:
  • 1 cup Butter (softened)
  • ½ cup White Sugar
  • 1 Egg
  • 1 tsp Almond Extract
  • 3 cups All-Purpose Flour
  • ¼ tsp Salt
  • 3 Eggs (beaten)
  • ½ cup White Sugar
  • 1½ cups Almonds (finely chopped)
How to make Finnish Cookie Sticks:
  • Preheat oven to 350 °F (175 °C).
  • Combine butter and ½ cup white sugar in a medium bowl. Mix well until the mixture turns smooth.
  • Add 1 egg and almond extract. Stir.
  • Mix together salt and flour.
  • Add the flour mixture to the sugar mixture. Mix with your hands to form smooth dough.
  • Roll the dough into logs about ½ inch thick and 2 to 3 inches long.
  • Dip each log into the beaten eggs and then into the remaining ½ cup white sugar.
  • Finally, roll the logs into almonds and place them onto ungreased cookie sheets.
  • Bake the logs for 8 to 10 minutes.
  • Remove and cool the cookies on the baking sheets for 5 minutes.
  • Remove them from the sheets and transfer to wire racks. Cool them completely.
