  • ½ package (125g) Sweet Butter
  • 1 cup Water
  • 1 cup Flour
  • 1 tbsp Baking Powder
  • 4 Eggs

    For Cake Filling
  • 1 pint Milk
  • 1 cup Sugar
  • 2 tbsp Potato Starch
  • 2 tbsp Flour
  • 1 package (250g) Sweet Butter
  • 1 tsp Vanilla Extract
How to make Karpatka Cake:
  • Combine together sweet butter, water, flour, and baking powder in a saucepan.
  • Boil the mixture for 3 minutes and remove from heat.
  • Add eggs, stirring continuously.
  • Pour the batter in two baking dishes.
  • Bake the cake at 350°F for 30 minutes or until a toothpick inserted in the center comes out clean.
  • Pour milk in a saucepan and keep it for boiling.
  • Add sugar, flour and potato starch to the milk and stir well.
  • Add vanilla extract.
  • Remove and cool the mixture.
  • Add butter and mix well.
  • Line the filling between the cake layers and refrigerate the cake to set.

Karpatka has nothing to do with potatoes! It's very nice, creamy and sweet cake. Potato starch is used only to thicken the cream, but you cannot taste it in the cake!
