• 3 cups Maida
• tsp Baking Powder
• 1 cups Sugar
• 4 Eggs
• 1 cups Oil
• 3 tbsp Ghee
• 4 Cardamoms (powdered)
• tsp Vanilla Essence
• tsp Lemon Juice
• A pinch of Salt
• Few Cashews
• Few Raisins
How to make Kerala Cake:
Preheat oven to 350 F. Grease a baking pan and dust with some flour.
Break eggs in a bowl and beat well.
Add sugar, oil, and ghee. Beat for 2-3 minutes using an electric mixer.
Sift maida, baking powder, and salt in a large bowl.
Add maida mixture into the egg mixture, a little at a time, stirring continuously.
Stir in vanilla essence, lemon juice, and cardamom.
Pour the batter into the prepared pan.
Top with cashews and raisins.
Bake for 40-45 minutes, or until brown.
Slice and serve warm.
