  • 3 cups Maida
  • ½ tsp Baking Powder
  • 1½ cups Sugar
  • 4 Eggs
  • 1½ cups Oil
  • 3 tbsp Ghee
  • 4 Cardamoms (powdered)
  • ¼ tsp Vanilla Essence
  • ½ tsp Lemon Juice
  • A pinch of Salt
  • Few Cashews
  • Few Raisins
How to make Kerala Cake:
  • Preheat oven to 350 °F. Grease a baking pan and dust with some flour.
  • Break eggs in a bowl and beat well.
  • Add sugar, oil, and ghee. Beat for 2-3 minutes using an electric mixer.
  • Sift maida, baking powder, and salt in a large bowl.
  • Add maida mixture into the egg mixture, a little at a time, stirring continuously.
  • Stir in vanilla essence, lemon juice, and cardamom.
  • Pour the batter into the prepared pan.
  • Top with cashews and raisins.
  • Bake for 40-45 minutes, or until brown.
  • Slice and serve warm.
