  • 1 kg Lamb Pieces (cooked)
  • 2 medium Onions (chopped)
  • 3 Garlic Cloves (minced)
  • Salt to taste
  • 1 tsp Ginger
  • 1 tsp Pepper
  • ½ tsp Saffron (crumbled)
  • ¼ tsp Moroccan Yellow Colorant
  • 1 Cinnamon Stick
  • ¼ cup Olive Oil
  • ¼ cup Butter
  • Small handful of Cilantro Bouquet
  • 1 cup Dried Apricots
  • 3tbsp Sugar
  • 1 tsp Cinnamon
  • Handful of fried Almonds
  • 2 tsp Sesame Seeds
How to make Lamb Apricots:
  • Take lamb with onion, garlic, spices, oil, butter in a pan and cook it on medium flame until it is brown on all sides.
  • Pour into 2½ cup water with cilantro and get it to boil. Then cook it covered on medium flame until meat is tender and gravy is condensed.
  • Take out ½ cup meat stock and keep it to the side.
  • Put apricots with water in a pan and cook it covered on medium flame for 10-15 min. Strain the apricots and mix with sugar, meat stock and boil until it thickens.
  • Pour it over cooked lamb and top up with almonds.
