  • 2 cups Maida
  • 2 tsp Baking Soda
  • 1½ tsp Salt
  • 2 tsp Cinnamon
  • 3 Eggs
  • ½ cup Vegetable Oil
  • 1 1/3 cups Sugar
  • 1 tsp Vanilla Essence
  • ½ cup golden Raisins
  • ½ cup Cashews (chopped)
  • 2 cups Mangoes (diced)
  • ¼ cup flaked Coconut
How to make Mango Cake:
  • Preheat oven to 350 °F.
  • Butter a square baking pan.
  • Sift maida, baking soda, salt, and cinnamon in a large bowl.
  • Make a well in the center and pour in eggs, vegetable oil, sugar, vanilla essence, raisins, cashews, mangoes, and coconut.
  • Beat thoroughly until you get a smooth batter. Avoid over-mixing.
  • Pour the batter into the prepared pan and leave aside for 20 minutes.
  • Bake for 1 hour, until a toothpick inserted comes out clean.
  • Remove and serve warm or refrigerate.
