Ingredients:
  • 1 Carrot (grated)
  • 1 tbsp Paprika
  • ½ tbsp Dried Mango
  • ½ tbsp Dried Cherries
  • ½ tbsp Dried Papaya
  • ½ tbsp Dried Pineapples
  • ½ tbsp Dried Prunes
  • ½ tbsp Dried Cranberries
  • ½ tbsp Dried Blueberries
  • ½ tbsp Dried Figs
  • ½ tbsp Dried Raisins
  • ½ tbsp Garlic (chopped)
  • ½ tbsp Sugar
  • ½ cup plus 1 tbsp White Vinegar
  • 1/4 tsp Turmeric Powder
  • 1/2 tsp Mughlai Garam Masala
  • 2-3 strands Saffron
  • A pinch Cardamom Powder
  • A pinch Nutmeg Powder
  • Salt to taste
How to make Mewa Nu Achar :
  • Soak the dry fruits overnight in vinegar
  • Combine the carrot with 1 tbsp vinegar, sugar and garlic and put on heat until the carrot softens.
  • Mix in the soaked dry fruits followed by vinegar, salt, paprika, turmeric powder, mughlai garam masala, cardamom powder, nutmeg powder and saffron.
  • Stir the ingredients well until the gravy becomes thick and no liquid remains.
  • Remove from the heat and let it cool on room temperature. Put in an air-tight jar and refrigerate.
