Ingredients:
  • 3 tbsp Olive Oil
  • 450 gm ripe Tomatoes (peeled and chopped)
  • 1 teaspoon Oregano
  • Thyme or Basil
  • Salt and Black Pepper
  • Pinch of Sugar
  • 4 Eggs (beaten a little)
How to make Omelet with Fresh Tomatoes:
  • Heat the oil in a pan and add the tomatoes and basil or thymes and oregano.
  • Stir and allow simmering for a few minutes until no liquid is left.
  • Add salt, pepper, sugar and the beaten eggs all over the cooked material and stir slowly until eggs are cooked but not become hard.
  • Remove from the pan and serve hot.
