Ingredients:
  • ½ kg Field Beans
  • ½ kg Onions (chopped)
  • ¼ kg small Eggplants
  • ¼ kg small Potatoes
  • ¼ kg Tomatoes
  • ¼ kg sweet Potatoes (cut into ½ inch pieces)
  • 4 pods Garlic (whole)
  • 1 bunch Coriander (chopped)
  • 4-5 green Chilies (chopped)
  • 1 sp Ginger-Garlic Paste
  • 1 sp Chili Powder
  • 1 sp Turmeric Powder
  • 1 tsp Dhania - Jeera Powder
  • 1 tsp Curry Powder
  • 1 tsp Sambhar
  • 1 tsp Black Pepper
  • 1 spoon Ajwain
  • 1 spoon Salt
  • 2 tbsp Oil
How to make Papri Vegetarian:
  • Rinse all the vegetables and drain.
  • Heat oil in pan and fry half of the chopped onions until golden brown.
  • Add the vegetables except small brinjals and all the spices except ajwain and the remaining onions into the pan.
  • Cover and put into medium oven at 350 degrees F for 45 minutes.
  • After 45 minutes, put the small brinjals and ajwain into the oven and cook for 15 minutes.
  • Remove from the oven and serve.
