  • 4 ripe Tomatoes (sliced)
  • 4 tbsp Mayonnaise
  • 4 tbsps Parmesan Cheese
  • 1 tbsp Dijon Mustard
  • 1 tbsp Brown Mustard
  • 1 tsp Dried Oregano
  • Salt and Pepper to taste
  • 1 tsp Fresh Parsley (chopped)
  • 1/4 cup Mozzarella cheese (shredded)
How to make Parmesan Tomatoes:
  • Take a baking sheet and arrange the tomato slices in a layer.
  • In a bowl, mix together mayonnaise, parmesan, Dijon mustard, and brown mustard.
  • Sprinkle a little bit of oregano, salt and pepper.
  • Top each tomato slice with a small amount of mayonnaise mixture and then sprinkle the mozzarella cheese and parsley on top.
  • Bake for 15 minutes, at 175 deg C.
  • Serve hot.
