  • 1 kg Baby octopus
  • 2 Red capsicums (diced)
  • 1/2 Cup lime juice
  • 3 Cups canola oil
  • 1/2 Cup red wine vinegar
  • 10 Basil leaves
  • 1 tbsp Oregano
  • 2 tbsp Garlic (crushed)
  • 1/2 Cup reserve juice
  • 1 Red chilli
  • Salt to taste
How to make Pickled Octopus:
  • Place baby octopus, 1 cup canola oil, salt and 1 tbsp crushed garlic in baking tray.
  • Toss till octopus is coated.
  • Cover it in a foil.
  • Bake at 180 degrees for 15 minutes and then remove foil.
  • Strain octopus and reserve juice.
  • Allow octopus and juice to cool.
  • Now mix diced capsicums, oregano, 1 tbsp crushed garlic, basil leaves, red wine vinegar, lime juice and canola oil.
  • Toss it properly.
  • Cool it overnight.
  • Pickled Octopus is ready.

Fabulous recipe. I've made it about a dozen times and I'm always surprised how tender the octopus turns out.

To give it a more authentic italian flavour I've used Extra virgin Olive oil insted of Canola (which i detest) and added some chillies. try!
