 | | Ingredients: |
| • 1 kg Baby octopus
• 2 Red capsicums (diced)
• 1/2 Cup lime juice
• 3 Cups canola oil
• 1/2 Cup red wine vinegar
• 10 Basil leaves
• 1 tbsp Oregano
• 2 tbsp Garlic (crushed)
• 1/2 Cup reserve juice
• 1 Red chilli
• Salt to taste
| | | How to make Pickled Octopus: |
| • | Place baby octopus, 1 cup canola oil, salt and 1 tbsp crushed garlic in baking tray.

| • | Toss till octopus is coated.
|
| • | Cover it in a foil.
|
| • | Bake at 180 degrees for 15 minutes and then remove foil.
|
| • | Strain octopus and reserve juice.
|
| • | Allow octopus and juice to cool.
|
| • | Now mix diced capsicums, oregano, 1 tbsp crushed garlic, basil leaves, red wine vinegar, lime juice and canola oil.

| • | Toss it properly.
|
| • | Cool it overnight.
|
| • | Pickled Octopus is ready. |

Fabulous recipe. I've made it about a dozen times and I'm always surprised how tender the octopus turns out.
To give it a more authentic italian flavour I've used Extra virgin Olive oil insted of Canola (which i detest) and added some chillies. try!
