  • 1 (16 oz) can Beets (drained and sliced)
  • 1 Egg (lightly beaten)
  • ½ cup Breadcrumbs (fine and dry)
  • 2 tbsp unsalted Butter
  • 1 tbsp Lemon Juice
  • 1 tbsp fresh Parsley (chopped)
How to make Punajuuripihvit:
  • Sprinkle half of the breadcrumbs on a paper towel.
  • Dip the beets into beaten egg and place them on the breadcrumbs.
  • Sprinkle the remaining crumbs over the beets.
  • Melt butter in a skillet on medium-low flame.
  • Add beet slices and sauté for 3 minutes on each side till they turn brown.
  • Remove and transfer onto a serving platter.
  • Sprinkle lemon juice and parsley.
  • Serve hot.
