Ingredients:
  • 1/2 cup extra virgin Olive Oil
  • 1/2 cup Butter
  • 1 cup Onion (minced)
  • 1/2 cup Celery (minced)
  • 1/4 cup Carrot (minced)
  • 1 pound Veal (ground)
  • 1 pound Pork (ground)
  • 1/2 pound Beef (ground)
  • 1/4 cup Pancetta Bacon (finely chopped)
  • 1/2 cup Milk
  • 2 cups Tomato Sauce
  • 2 cups Beef Broth
How to make Ragu Bolognese:
  • In a pan heat the olive oil and melt the butter. Add the onion, celery and carrots and sauté for 3 to four minutes until tender.
  • Add the pork, veal, beef and pancetta and cook for 20 minutes until browned.
  • Add the milk and cook for 15 minutes until the liquid evaporated.
  • Add the tomato sauce and beef broth and stir. Simmer for 2 ½ hours.
