  • 1/2 Red bell pepper, finely diced
  • 6 Ounces plain yogurt
  • 2 tbsp Fresh mint leaves, finely chopped
  • 1 Cucumber, peeled and diced
  • Salt and pepper to taste
How to make Red Bell Pepper Raita:
  • Put Salt and pepper, plain yogurt, fresh mint leaves, cucumber, red bell pepper in a bowl and stir to blend.
  • Sprinkle with pepper and salt, to taste.
  • Refrigerate and covered, for at least one hour.
  • Serve.
