Ingredients:
  • 1 cup Rice (cooked, cooled)
  • 2 Eggs
  • 2 tbsp Raisins
  • 1/4 tsp Lemon Zest (grated)
  • 2 tbsp Almonds (chopped)
  • 3 tbsp All purposeFlour
  • 4 tbsp Butter (unsalted)
  • 1 tbsp Sugar (powdered)
How to make Rice Fritters:
  • Take a small bowl, mix rice, eggs, almonds, lemon zest, raisins, and flour and blend them together well.
  • Make eight small cakes of this mixture.
  • Melt butter in a skillet over medium heat. Fry cakes for 2-3 minutes on each side.
  • Take out on a serving plate and sprinkle powdered sugar before eating it.
Suggestions:
Serve it with jam or jelly.
