Ingredients:
  • 8 oz baby Zucchini (trimmed)
  • 8 baby Turnips (peeled & halved)
  • 3 tbsp Olive Oil
  • 2 tbsp fresh Italian Parsley (chopped)
  • 20 baby Carrots (peeled trimmed)
  • 8 oz baby Pattypan Squash (halved)
  • 8 baby Golden Beets (peeled & halved)
  • Salt to taste
  • Pepper to taste
How to make Roasted Baby Vegetables:
  • Preheat oven to 400°F.
  • Take a large bowl and add all vegetables (except zucchini).
  • Now, spread out the mixed veggie content on a large rimmed baking sheet. Add the oil as well, leaving a tsp of it for later use.
  • Sprinkle salt and pepper on vegetables.
  • Roast for about 15 minutes.
  • Mix zucchini to reserved bowl and sprinkle salt and pepper along with the remaining 1 tsp oil.
  • Mix zucchini to baking sheet with vegetables. Roast all vegetables again and stir occasionally for about 15 minutes. Garnish it with parsley and serve hot.
