Ingredients:
  • 3 cups cooked Turkey (shredded)
  • 2 cups Sour Cream
  • 2 cups Cheddar Cheese (shredded)
  • 1 tsp Salt
  • 12 (10-inch) Corn Tortillas
  • 1/3 cup Corn Oil

    For the Sauce:
  • 2 cans (4 oz each) chopped mild green Peppers
  • 1 clove Garlic (minced)
  • 2 tbsp Olive Oil
  • 2 cups Onion (chopped)
  • 1 tsp Salt
  • ½ tsp Oregano
How to make Turkey Enchiladas:
  • Combine sour cream, Cheddar cheese, and salt in a large mixing bowl.
  • Add turkey and toss to coat properly.
  • Heat corn oil in a large pot and fry the tortillas until soft.
  • Drain and stuff with the turkey mixture. Seal properly.
  • Place the stuffed tortillas side-by-side in a shallow baking pan, keeping the sealed sides down.
  • Heat olive oil in a pan.
  • Add peppers and garlic. Saute.
  • Add onions, salt, and oregano, along with some water to make a sauce base. Cook on low heat until the sauce thickens.
  • Pour over the stuffed tortillas and bake at 350 degrees F for 30 minutes.
  • Remove and leave aside for 4-5 minutes. Serve warm.
