Ingredients:
• 2 Cups fresh vegetables, mushrooms, peas, carrots, cauliflower, potato
• 250 ml Plain Yogurt
• 2 tbsp Butter
• 1 Inch ginger root, chopped
• 2 Onions, chopped
• 1/2 Lemon, squeezed to get juice
• 1-1/2 tsp Turmeric powder
• 1 tsp Cinnamon powder
• 3 Garlic cloves, chopped
• 1 tsp Red chilli powder
• 2 tsp Coriander powder
• 1/2 Cup coriander leaves
• 20 Pods cardomom
• Salt and pepper to taste How to make Vegetable Tikka Masala:
• Combine the yoghurt and chopped ginger, garlic and onions into a blender and blend till soft.
• Add the lemon juice, salt and Pepper to it, lightly mix.
• Add the spices but stopping before except the cardomom pods and blend all the spices till nicely mixed.
• Combine a few of the fresh coriander leaves and mix well till lightly blended.
• Add the butter to the preheated slow cooker or a big pot.
• Melt till the butter starts slightly bubbling and adds the blended ingredients to it.
• Powder the cardomom pods.
• Add it to the sauce.
• Combine the vegetables with it and mix well.
• Add the remaining Coriander leaves to it.
• If cooking in slow cooker set to low heat and cook for about 6 hours and if using the pot, set on low flame and cook till the mixture bubbles.
