Indian Recipes : Vegetable Tikka Masala Recipe

Ingredients:
• 2 Cups fresh vegetables, mushrooms, peas, carrots, cauliflower, potato
• 250 ml Plain Yogurt
• 2 tbsp Butter
• 1 Inch ginger root, chopped
• 2 Onions, chopped
• 1/2 Lemon, squeezed to get juice
• 1-1/2 tsp Turmeric powder
• 1 tsp Cinnamon powder
• 3 Garlic cloves, chopped
• 1 tsp Red chilli powder
• 2 tsp Coriander powder
• 1/2 Cup coriander leaves
• 20 Pods cardomom
• Salt and pepper to taste
How to make Vegetable Tikka Masala:
Combine the yoghurt and chopped ginger, garlic and onions into a blender and blend till soft.
Add the lemon juice, salt and Pepper to it, lightly mix.
Add the spices but stopping before except the cardomom pods and blend all the spices till nicely mixed.
Combine a few of the fresh coriander leaves and mix well till lightly blended.
Add the butter to the preheated slow cooker or a big pot.
Melt till the butter starts slightly bubbling and adds the blended ingredients to it.
Powder the cardomom pods.
Add it to the sauce.
Combine the vegetables with it and mix well.
Add the remaining Coriander leaves to it.
If cooking in slow cooker set to low heat and cook for about 6 hours and if using the pot, set on low flame and cook till the mixture bubbles.
