- 4 Medium potatoes, unpeeled
- 1/4 tsp Pepper
- 1/2 Cup sliced green onions
- 1/3 Cup olive oil
- 2 tbsp Wine vinegar or juice of 1 lemon
- 2 Hard-cooked eggs, chopped
- 1 tsp Oregano
- Salt to taste
- Scrub the potatoes and cook in salted, boiling water for about 30 to 40 minutes till tender.
- Peel and cut up the potatoes.
- Combine green onions, oregano, salt, pepper, vinegar, olive oil and chopped eggs with it, mix gently.
