- 2.20 lb Whitebait
- 2 Whole lemons, sliced in wedges
- 6 oz Flour
- Salt to taste
- Oil for frying
- Wash the fish properly and drain.
- Preheat the oil in a frying pan.
- Combine flour and salt in a bowl, mix well.
- Coat the white bait in this flour mixture, shaking off excess.
- Fry them in the oil till golden brown.
- Serve hot with the fresh lemon wedges.
