- 1/3 cup Butter
- 1 cup Sugar
- 1 tsp Grated Lemon Rind
- 1/3 cup Lemon Juice
- 1/4 tsp Salt
- 4 Egg Yolks (slightly beaten)
- Pre baked Tart Shells as required
- Combine all ingredients in the top of a double boiler.
- Stir over boiling water for 10 minutes, stirring constantly.
- Continue to cook until thickened.
- Allow to cool and then fill the tartlet shells.
- Served chilled.
- Lemon Tartlets are ready.
