- 150g Cep Mushrooms, fresh
- 25g Butter
- 6 Eggs (beaten)
- Pinch of Black Truffles
- Place mushrooms and butter in a frying pan, over medium heat. Cook for 3-5 minutes, or until soft.
- Add eggs to the pan and tilt the pan to spread the mixture evenly.
- Cook until the omelet is set underneath and slightly runny on the top.
- Spread the truffle over the omelet.
- Fold over and serve.
