Norwegian Beet Salad
- 1 (6 oz) Beet
- 1 (6 oz) Carrot
- 1 (6 oz) Apple
- 1 cup Pecans/Walnuts (chopped)
- 1/2 cup dried Coconut (shredded)
- 2 tbsp Lemon Juice
- 1 tbsp fresh Ginger (minced)
- 1 tbsp Asian Sesame Oil (toasted)
- Fresh Parsley
- Salt (to taste)
- Peel and shred beet, carrot and apple.
- Combine them in bowl.
- Add nuts, coconut, lemon juice, ginger and oil to the beet mixture.
- Stir the ingredients well and sprinkle with parsley.
- Season with salt to taste.
