- 1/2 cup Soy Sausage (ground)
- 1 bunch Spinach (washed, drained and chopped)
- 1 can Low-fat Cottage Cheese (shredded)
- 1/2 cup Green Onion (sliced)
- 1 cup Cheddar Cheese (shredded)
- 4 Eggs (lightly beaten)
- Pepper to taste
- Salt to taste
- Mix all the ingredients.
- Pour the mixture into a pie plate.
- Bake it for 40 minutes at 350 degree F.
- Allow it to cool for 15 minutes.
- Cut into slices and serve.
