Lebanese Tomato Soup
- 4 cups Tomato juice
- 1/4 cup Grain rice (short)
- 5 Garlic cloves
- 1/4 cup Butter
- 1 tsp Coriander (dried)
- 1 tsp Salt
- Wash the rice then put it in a pan with the tomato juice.
- Bring to boil, then reduce the heat and let it simmer for 30 minutes.
- Crush the garlic with the dried coriander, then sauté in the butter until golden.
- Add the garlic mixture and salt to the soup and let it simmer for five minutes.
- Serve hot.
