- 1 Tender Coconut
- 1/2 cup Pineapple Pieces
- 1/2 tsp Ginger (chopped)
- Few sprigs of Mint (garnish)
- 1 tsp Sugar
- Drain the coconut water and spoon the pulp into a bowl.
- In a blender, add pine apple pieces, coconut pulp and ginger; blend it well.
- Now add ½ cup coconut water and sugar; stir it well.
- Blend the remaining coconut water; stir it well.
- Refrigerate the mixture and garnish it with sprig of mint before serving.
