Lemony Carrot Salad
- 1 cup Carrots (shredded)
- 1 1/2 tbsp fresh Dill (chopped)
- 1 tbsp Scallion (chopped)
- 1 tbsp Lemon Juice
- 1 tbsp Olive Oil
- 1/2 small clove Garlic (minced)
- Pepper to taste
- 1/8 tsp Salt
- Add lemon juice, oil, garlic, salt and pepper in a medium bowl.
- Combine it well.
- Now add carrots, dill and scallion and toss to coat.
- Refrigerate it for about 2-3 hours.
- Serve it chilled.
