English Potato Salad
- 2 lbs. Potatoes
- 3 Green Onions (chopped)
- 2 Eggs (boiled)
- 2 tbsp Mayonnaise
- 1 tbsp Parsley (chopped)
- 1 tbsp Mint (chopped)
- Carrot Fans (to garnish)
- Cook the potatoes with their skin on.
- Chop the hard boiled eggs into pieces.
- Mix mayonnaise, parsley, and mint in a bowl.
- Add cooked potatoes and eggs to the mayonnaise. Stir well.
- Garnish with carrot fans.
- Serve chilled with your favorite barbecue meal.
