Greek Spinach Rice
- 1½ kg Spinach
- ½ kg fresh Onions (peeled and chopped)
- ½ kg Dill
- ½ cup Rice
- 1 tbsp Lemon Juice
- Salt to taste
- 1 tbsp Olive Oil
- Rinse the spinach and dill carefully and finely chop them.
- Heat olive oil in deep pot and fry the onions for a while, add rice, spinach and dill, salt and water. Cover and cook until rice is about to tender.
- Remove from heat and add the lemon juice. Move the pot back and forth and recover.
- Serve after few minutes.
