Red Fried Potatoes

- 1 ½ pounds small Red Potatoes (rinse well)
- 3 tbsp Butter
- 3 tbsp Olive Oil
- ½ tsp Salt
- 1 tbsp Parsley (finely chopped)
- Melt the butter in a pan with olive oil on medium heat.
- Add potatoes and stir-fry until tender and golden brown.
- Sprinkle the salt and a little pepper and mix.
- Garnish with parsley and serve the yummy delight.
