In Hyderabad, this is cooked all night long and eaten in the morning as a breakfast food. Try making this in a crock pot all day or overnight. An important spice is missing from this recipe, not sure of the name; it is similar to a type of lychen.

In Hyd Nihari is not made from beef, it is made from paya i.e the lower part of goat or beef legs with the hooves still attached. They are burned over direct flame to remove the hair which also gives them a smoky taste.
