| • | Dissolve the gelatine gently in hot water.

| • | Peel off the lemon rind. Cut the rind into thin strips.

| • | Add milk, sugar and strips of lemon rind to the gelatin solution.

| • | Stir on a low flame till sugar gets dissolved.

| • | Drain the solution into a basin and keep stirring occasionally until it attains the consistency of cream.

| • | Put the jelly into a wet mould.
|
| • | Flavor with vanilla or coffee essence.

| • | Milk Jelly is ready. |
