Ingredients:
  • 2 Potatoes
  • 20 Cluster beans
  • 1 Yam (sliced)
  • 4 Lady Fingers
  • 2 Brinjals
  • 1 Lotus stem
  • 1 Carrot
  • 2 Cups gram flour
  • 1 tsp Cumin seeds
  • 1 tsp Fenugreek seeds
  • 1 tsp Ginger (grated)
  • 5 green chillies
  • 2 tbsp Coriander (chopped)
  • 1 tsp Cinnamon clove powder
  • 1/4 Cup tamarind water
  • 1/2 tsp Turmeric powder
  • 1 tsp Sugar
  • 6 Cups hot water
  • Oil for frying
How to make Vaghaar Kadhi:
  • Wash and peel all the vegetables.
  • Chop them into chunks.
  • Heat the oil.
  • Fry brinjals and lady finger one by one till crisp.
  • Keep them aside.
  • Now add cumin and fenugreek seeds.
  • Mix flour and stir till light brown.
  • Add green chillies, curry leaves and chopped vegetables.
  • Stir well.
  • Pour hot water and stir till boiled.
  • Mix turmeric, sugar and salt to tamarind.
  • Add this to the kadhi.
  • Cook over medium heat till vegetables are cooked.
  • Now add fried brinjals and lady fingers.
  • Sprinkle chopped coriander.
  • Vaghaar Kadhi is ready.
