Indian Recipes : Vaghaar Kadhi Recipe

Ingredients:
• 2 Potatoes
• 20 Cluster beans
• 1 Yam (sliced)
• 4 Lady Fingers
• 2 Brinjals
• 1 Lotus stem
• 1 Carrot
• 2 Cups gram flour
• 1 tsp Cumin seeds
• 1 tsp Fenugreek seeds
• 1 tsp Ginger (grated)
• 5 green chillies
• 2 tbsp Coriander (chopped)
• 1 tsp Cinnamon clove powder
• 1/4 Cup tamarind water
• 1/2 tsp Turmeric powder
• 1 tsp Sugar
• 6 Cups hot water
• Oil for frying
How to make Vaghaar Kadhi:
Wash and peel all the vegetables.
Chop them into chunks.
Heat the oil.
Fry brinjals and lady finger one by one till crisp.
Keep them aside.
Now add cumin and fenugreek seeds.
Mix flour and stir till light brown.
Add green chillies, curry leaves and chopped vegetables.
Stir well.
Pour hot water and stir till boiled.
Mix turmeric, sugar and salt to tamarind.
Add this to the kadhi.
Cook over medium heat till vegetables are cooked.
Now add fried brinjals and lady fingers.
Sprinkle chopped coriander.
Vaghaar Kadhi is ready.
