Ingredients:
  • 750 gm Chicken
  • 1 Onion (chopped)
  • 1 Tomato (chopped)
  • ½ tsp Mustard Seeds
  • 1 tsp Red Chili Powder
  • 1 tsp Coriander Powder
  • ¼ Turmeric Powder
  • 10 Curry Leaves
  • 1 inch Piece Ginger
  • 4 Fakes Garlic
  • ¼ Cup Coconut (grated)
  • Oil
  • Salt (to taste)
  • Coriander Leaves (chopped for Garnishing)
How to make Coconut Chicken Curry:
  • Clean, wash and cut the chicken into medium size pieces. Keep it aside.
  • In a mixer add coconut, ginger and garlic and make a paste. Keep it aside.
  • Heat up the pan with oil add mustard seeds.
  • When they begin to crackle add curry leaves and onion.
  • Fry it until the onion become brown in color.
  • Add tomatoes, salt cook it for another 3 min or until tomatoes become soft.
  • Now add the grinded paste and cook till aroma disappears.
  • Add chili powder , coriander powder, turmeric and cook for a 2 min and add chicken pieces.
  • Mix it well and add 2 cup of water and cover the lid.
  • Cook it in medium flame for 20 min.
  • Add salt mix it well and switch off the flame.
  • Finally add coriander leaves.
Suggestions:
serve with chapati or rice
