Ingredients:
  • 2 tbsp Butter
  • ½ cup Carrot (finely chopped)
  • ½ cup Onion (finely chopped)
  • ½ cup Celery (finely chopped)
  • ½ cup Button Mushrooms (chopped)
  • ½ cup Butter
  • ¼ cup All-Purpose Flour
  • 1 quart Chicken Broth
  • 1 (14 oz) can Artichoke Hearts (drained)
  • 1 Bay Leaf
  • ¾ tsp Salt
  • ½ tsp Cayenne Pepper
  • ¼ tsp dried Thyme
  • ¼ tsp dried Oregano
  • ¼ tsp dried Sage
  • 1 cup Heavy Cream
  • 12 Oysters (shucked with juice)
How to make Elegant Oyster Soup:
  • Place a large pot on heat and melt 2 tbsp butter.
  • Add carrot, onion, celery, and mushrooms. Sauté for 5 minutes till the onions turn transparent.
  • Place another large pot on heat and melt ½ cup butter.
  • Add flour and cook for 5 minutes.
  • Stir the chicken broth to the flour.
  • Add the sautéed vegetables to the chicken broth.
  • Add artichoke hearts, bay leaf, salt, cayenne pepper, thyme, oregano and sage. Mix well and simmer for 30 minutes on medium heat.
  • Add heavy cream and oysters to the soup. Whisk well.
  • Simmer the soup but do not boil.
  • Serve hot.
