| Ingredients: |

• 2 Cups grated beetroot
• 1-1/2 tsp Grated ginger
• 1 Finely chopped onion
• 3/4 tsp Mustard seeds
• 1 Sprig curry leaves
• 2 Green chillies, split
• 2 Cups curd
• 1-2 tbsp Oil
• Salt to taste

| How to make Beetroot Pachadi: |
| • | Heat oil in a pan over medium heat.
|
| • | Fry the mustard seeds.
|
| • | Add onion and fry until it turns brown.
|
| • | Mix green chillies and keep stirring.
|
| • | Add the grated beetroot, curry leaves, ginger, and salt to taste.
|
| • | Simmer it until the beetroot is cooked properly.
|
| • | Add curd to the mixture when cool.
|
| • | Beetroot Pachadi is ready. |
