Ingredients:
• 1 Brinjal (Chinese Eggplant) (chopped, 2 inch long)
• 250gm Curd (Yogurt)
• 2 Green Chilies
• Mustard
• Fenugreek
• Kalajeera
• Curry Leaves
• Cumin
• Fennel Seed
• Ginger
• 1 tsp sugar
• Salt (to taste)
• 2 Green Chilies
• Turmeric
• Oil
How to make Dahi Baingan:
Add turmeric and salt to the brinjal.
Take that brinjal and deep fry it.
On the other side, mix yogurt with salt, sugar and little water.
Mix all the above ingredients with fried brinjal.
Fry mustard, fenugreek, cumin, kalajeera, and fennel seed and let it splutter.
Add ginger and green chilies to them and then add curry leaves.
Mix these in the yogurt brinjal.
Suggestions:
Serve with hot rice/ roti
