  • 1 lb./500 g Pumpkin (boiled and mashed)
  • ½ cup dilute Tamarind Water
  • ½ cup Jaggery (grated and dissolved)
  • 1 Bay Leaf
  • 1 tsp Mustard Seeds
  • 1 tsp Lime Juice
  • 1 tsp Raisins
  • 1 cup Water
  • 2 Dry Red Chilies (slit)
  • 1 tsp Mustard Oil
  • Salt to taste
How to make Pumpkin Oambal:
  • To the tamarind water add the pumpkin and mix well.
  • Now heat the oil, add mustard seeds and fry till they start crackling.
  • Add chilies and bay leaf.
  • Stir for a minute and then add the raisins and stir for another minute.
  • Add the pumpkin-tamarind mixture and stir-fry for a few minutes.
  • Stir in the jaggery mixture and bring to the boil.
  • Allow it to simmer for a couple of minutes and remove from heat.
  • Add the lime juice and combine well.
  • Remove the bay leaf before serving.
