Beetroot Pachadi is a is yummy and an extremely amazing looking dish. It is made by adding beetroot to curd and is generally eaten as a side dish increasing the taste value of every dish.
Beetroot Pachadi Recipe

Ingredients:
  • 2 Cups grated beetroot
  • 1-1/2 tsp Grated ginger
  • 1 Finely chopped onion
  • 3/4 tsp Mustard seeds
  • 1 Sprig curry leaves
  • 2 Green chillies, split
  • 2 Cups curd
  • 1-2 tbsp Oil
  • Salt to taste
How to make Beetroot Pachadi:
  • Heat oil in a pan over medium heat.
  • Fry the mustard seeds.
  • Add onion and fry until it turns brown.
  • Mix green chillies and keep stirring.
  • Add the grated beetroot, curry leaves, ginger, and salt to taste.
  • Simmer it until the beetroot is cooked properly.
  • Add curd to the mixture when cool.
  • Beetroot Pachadi is ready.
Suggestions:
Use a mixture of buttermilk and curd if you prefer the pachadi to have a thin consistency.

This is a hit. I did reduce the curd(yogurt) to 1 cup, since I like it to be thicker. But it is a simple, tasty recipe.
