  • 1 Brinjal (Chinese Eggplant) (chopped, 2 inch long)
  • 250gm Curd (Yogurt)
  • 2 Green Chilies
  • Mustard
  • Fenugreek
  • Kalajeera
  • Curry Leaves
  • Cumin
  • Fennel Seed
  • Ginger
  • 1 tsp sugar
  • Salt (to taste)
  • 2 Green Chilies
  • Turmeric
  • Oil
How to make Dahi Baingan:
  • Add turmeric and salt to the brinjal.
  • Take that brinjal and deep fry it.
  • On the other side, mix yogurt with salt, sugar and little water.
  • Mix all the above ingredients with fried brinjal.
  • Fry mustard, fenugreek, cumin, kalajeera, and fennel seed and let it splutter.
  • Add ginger and green chilies to them and then add curry leaves.
  • Mix these in the yogurt brinjal.
Serve with hot rice/ roti
