  • For The Dough
  • 2 cup All Purpose Flour (maida)
  • 4 tbsp Hot Melted Ghee
  • ½ tsp Kalonji
  • ¾ tsp Salt

    For The Stuffing
  • 4 tbsp Khus-Khus
  • ¼ tsp Asafoetida
  • 2 tsp Jeera
  • 4 Big Red Kashmiri Chilies
  • 4 Cardamoms
  • 4 Cloves
  • 2 stocks Cinnamon
  • ½ tsp Kalonji
  • ½ tsp Ground Ginger
  • 2 tsp Ghee
  • Salt to taste
  • Ghee (for deep frying)
How to make Khus Khus Ki Puri:
  • For the dough
  • Take a bowl and sieve the flour.
  • Add ghee, kalonji and salt to make a stiff dough adding water as required. Knead properly.

    For the stuffing
  • Take a cup and soak khus khus in it to make a thick paste.
  • Take a tawa and for 2 minutes, roast asafoetida, jeera, chillies, cardamoms, cloves and cinnamon.
  • Now, make a powder of the roasted spices using a blender.
  • In a small vessel, heat ghee and saute ginger and kalonji in it for about 30 seconds.
  • Now, add khus- khus to this mixture and mix again.
  • Remove from the flame put the powdered masala and salt and mix properly.

    How to proceed
  • Start with dividing the dough in 20 equal balls and then roll one ball.
  • Put ½ tsp of filling in the center and envelope it. Roll again.
  • Take a kadai and heat ghee in it. Deep fry the puri until it is golden brown. Repeat the procedure with the other dough balls.
  • It is ready to be served with potato vegetable.
