Baingan bhaja is a traditional Bengali dish which completes a meal. This is the one which is served at the beginning of the meal with rice and dal, and those who have had the combo, know how heavenly it is. However, this does not mean that making it is a huge task. All you need is brinjals cut into rounds, laced with turmeric powder and salt and deep fried. Some even enhance the taste by adding ginger and chilli to it.
