  • 800 gms Red Spinach
  • 200 gms Potatoes (peeled and diced)
  • 90 gms Coconut (grated)
  • Salt to taste

    For Tempering
  • 2 tbsp Coconut Oil
  • 1 tsp Mustard Seeds
  • 1 tsp Urad Dal (washed and dried)
  • 1 Onion (sliced)
  • 2 sprigs Curry Leaves
  • 1-inch piece Ginger (julienned)
  • 6 Green Chilies (julienned)
How to make Spinach and Potato Fry:
  • Boil the potatoes in salt water.
  • In a skillet, heat the oil and add mustard seeds.
  • When the mustard seeds start to splutter, add the Urad dal and fry until golden brown.
  • Add the onions and fry till translucent.
  • Then add the ginger, green chilies, curry leaves and fry well.
  • Add the spinach and cook till dry.
  • Now, add the potatoes and then cook till the moisture evaporates.
  • Finally, mix in the grated coconut and stir for a minute.
  • Serve hot.
